Pancetta is made from the same cut of pork as bacon - and there the similarity ends. Our pancetta is consistently - and exceptionally - lean, cured with salt and a handful of spices, tightly rolled into the shape of a large salame and then dry-cured and aged naturally. No water is added. Nor is it smoked. Its intense flavor is key to an authentic Pasta Carbonara. It's also great in sauces, soups, salads, quiches, even pizza. This product needs to be cooked thoroughly before consuming.
