Healthy Salame Bruschetta

Requires:

1 whole wheat walnut loaf, sliced 1" thick (10-12 slices)
1 package (4 oz) sliced Columbus Toscano Salame
5-8 oz. basil pesto (2 Tbsp. per slice)
1 Swiss chard bunch, rinsed, chopped and blanched
1/8 cup pine nuts
¼ cup olive oil
Salt and pepper to taste

 
 

Directions:

To prepare the Swiss chard, boil water in a large pot. Wash and trim thick stems. Fold the large leaves in half and coarsely chop into 2” segments lengthwise. Add the chard to the boiling water and blanch for 30 seconds. Drain the water into a strainer and allow the chard to cool. Once the chard has cooled, gently squeeze out any excess water with your hands. Heat a medium sauté pan with olive oil over medium heat. Add the Swiss chard and sauté until tender (1-2 min). Season with salt and pepper.

Meanwhile, lightly toast the sliced whole wheat walnut bread. Brush the bread with basil pesto, drizzle with olive oil, season with salt and pepper and toast under the broiler.

To serve, place 2 slices of whole wheat walnut toast on a plate and top with the chard bunch. Add 2-3 slices of salame per person, and serve.
