Clams and Finocchiona


½ cup Columbus Finocchiona (cut into strips)
20 Clams or 1½ pound
1 tbsp. Olive Oil
½ White Onion (finely chopped)
1 Garlic Clove (sliced)
½ tsp. Salt
½ tsp. Pepper
½ tsp. Red Pepper Flakes
1 cup White Wine



In a large sauté pan over medium heat add olive oil, chopped onion and sliced garlic. Sauté for 3 minutes adding salt, pepper and red pepper flakes during this time.

When onions are translucent add wine cook for 30 seconds before adding clams.

Cover pan with a lid for 3 minutes.

Then add in sliced Finocchiona to pan and stir together with all ingredients. Cover again until all clams are open, about 2 minutes.

Place into bowl and serve with a crusty Italian bread.
