Cacciatore on a Crostini with Red Onion Jam


8oz Columbus Cacciatore

Crostini Ingredients:
About 1/2 loaf of good crusty bread such as ciabatta, sliced as thinly as possible
2 Tbsp extra-virgin olive oil
Salt and freshly ground pepper

Red Onion Jam Ingredients:
2 tablespoons olive oil
2 thinly sliced red onions
¼ cup red-wine vinegar or balsamic vinegar
½ cup dry red wine
½ teaspoon salt, or to taste
¼ cup whole grain brown mustard
2 teaspoons orange zest
Optional:  1 tsp chili flakes



Crostini Directions:

1. Preheat the oven to 375 degrees F.

2. Brush the bread on both sides with olive oil and season lightly with salt and pepper.

3. Arrange on a baking sheet and bake until crusty and brown, about 10 to 12 minutes.

Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

Onion Jam Preparation:

1. In a medium heavy-bottomed saucepan, heat oil over medium-low heat. Add onions and a generous pinch of salt.  Saute until they soften and become translucent, about 10-15 minutes, stirring with a wooden spoon. 

2. Add vinegar and wine while stirring.  Increase the heat and bring to a boil. Reduce heat to a simmer and cook until the liquid has evaporated, stirring frequently (30 to 45 minutes depending upon the moisture content of your onion).  Onions should be caramelized and completely tender. Watch VERY carefully towards the end, the onions can burn very easily.

3. Remove from heat.  Stir in the mustard, citrus zest and chili flakes, (if using).  Taste for seasoning.  Add salt if neccesary.

4. Transfer jam to a bowl or jar for serving.

Cook Time: 50 minutes
Total Time: 55 minutes


Cacciatore Crostini Preparation:

1. Slice Columbus Cacciatore into 1/8” – 1/4” slices

2. Serve onion jam warm or at room temperature

3. Place slice of Cacciatore onto toasted Crostini

4. Spoon ½ Tbsp of Red Onion Jam onto sliced Columbus Cacciatore.

5. Repeat until all Crostinis are completed. Place onto a platter or large plate and serve!
