BBQ Chicken Flatbread Pizza

Requires:

1 cup Columbus Rotisserie Seasoned Chicken, shredded or rough chopped
1 ¾ cups Columbus Mozzarella or Monterey Jack Cheese, shredded
1 lb pre-made pizza dough or homemade crust      
½ cup barbecue sauce
½ cup red onion, thinly sliced
1 red bell pepper, diced
Chopped cilantro, to taste (optional)

 
 

Directions:

For a Pizza:

Preheat oven to 475°F.

Prepare pizza dough per package instructions. Stretch dough into a rectangle until it is about ½ inch thick. Place pizza crust on foil-lined baking sheet.

Spread barbecue sauce evenly on pizza crust. Add chicken, onion, and bell peppers on top of the barbecue sauce. Top with cheese.

Bake 12 to 15 minutes or until crust is deep golden brown.

Garnish with cilantro and serve.

Serves 3 - 4

For a Grilled Flatbread:

Preheat grill to a medium high temperature.

Cut pizza dough in half and stretch each dough ball into a rectangle until it is about ½ inch thick. Lightly drizzle oil on one side of the dough of the first rectangle and evenly spread it to coat the dough.

Place the dough on the grill, oiled side down. As the first side is being grilled, lightly oil the second side of the dough. After 3-5 minutes or when the bottom has some grill marks, flip the flatbread over.

Spread barbecue sauce evenly on top of the flat bread. Add chicken, onion, and bell peppers on top of the barbecue sauce. Top with cheese.

Cook for another 4 minutes. Cover the grill for 1 minute or until the cheese has melted.

Remove from grill, garnish with cilantro and serve.

Repeat with the second flatbread.
